D.K. Kodama’s restaurant empire continues to grow. Making his name with “new wave sushi” and sweet, saucy Hawaiian Regional cuisine, he has done a lot of research and has proven a good student. With Italian (Vino, Little Vino) and high-end contemporary (Hiroshi Eurasion Tapas) covered, he’s also in the beef business. D.K. Steakhouse, adjacent to Sansei Seafood Restaurant & Sushi Bar, is keeping the Marriott’s parking garage perpetually full.
On the menu are all the requisite cuts from grain-fed Midwestern beef (hopefully one day he’ll go local and supply grass-fed Big Island bounty). The rib-eye is dry-aged; other cuts are wet-aged. In a town where the most popular steakhouses are chains (Ruth’s Chris, Morton’s and Outback), D.K. is a refreshing indie change, with sides that go beyond the usual and starters of scalloped potatoes and beefsteak tomatoes with asparagus Milanese, sautéed Maui onions and ahi sashimi—this is Hawaii after all.
